Swamp Potatoes & Green Beans

Ingredients:

  • 3 pounds potatoes, cut into 2" pieces (I used Yukons)
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon each kosher salt, pepper
  • 1 tablespoon Cajun seasoning (see note)
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme

Add potatoes and chopped onion to the bottom of a slow cooker. Drizzle with olive oil and season with salt, pepper, and seasonings. Toss to coat evenly.

  • 1 pound smoked sausage, sliced. You can use andouille sausage or ham, if that's what you have on hand. 
  • 1 pound fresh green beans, cut into 2-inch pieces. You can use frozen, fresh is best, don't use canned.
  • 1 can whole kernel corn, drained.
  • 1 can Campbells French Onion soup. If you don't have the soup, you can use a packet of dry onion soup mix and 1 cup water.
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup butter, sliced

Layer the sliced smoked sausage, green beans and corn, on top of potatoes. Pour soup and Worcestershire sauce over (or sprinkle with onion soup mix, add water). Scatter pieces of butter over the top.

Slow Cooker Directions:

Cover and cook on Low until potatoes are tender and everything is well flavored, 6 to 7 hours. Or, on High for 4 hours, stirring a few times throughout the process and just before serving. It will make it's own broth, combined with the soup.

Serve warm with cornbread. 

Notes:

  • The original recipe does not call for corn but I liked the addition.
  • Use whatever potatoes you have on hand, anything would work. 
  • For Cajun seasoning, I used a heavy hand of generic (Target brand) Cajun seasoning. If you use something like Tony Chaceres or Slap Yo Mama, it's going to add heat. When it's flavor I'm going for, I like the milder generic brands. Taste it first!
  • You could make this on the stove top on simmer, the slow cooker is easiest, an instant pot would make it fast.
