Chorizo & Sweet Potato Chili
In a heavy bottomed pan, or instant pot, add:
- 1 pound bulk chorizo (or casings removed), or use spicy pork sausage
- 1 chopped onion
- 2 poblano peppers, finely chopped
Next, add this stuff:
Let it cook until the spices and tomato paste are warmed thru and creating browned bits on the bottom of the pan.
- 1 Tbs chili powder
- 1 Tbs smoked paprika
- 2 tsp dried oregano
- 2 tsp ground coriander
- 2 tsp ground cumin
- 1 tsp kosher salt
- 3 Tbs tomato paste
Let it cook until the spices and tomato paste are warmed thru and creating browned bits on the bottom of the pan.
The Big Finish:
- Add 2 cups beef broth, and scrape up the bits from the bottom.
- 1 large sweet potato, peeled and chopped small
- 1 can mixed chili beans (can use kidney or black beans)
- 2 Tbs Worcestershire sauce
- Few dashes of hot sauce
