Cauliflower Buffalo Dip

2 (10oz) bags riced cauliflower (roasted garlic, garlic herb, etc.)
6 oz room temp cream cheese 
1 cup plain greek yogurt or sour cream
1 cup Frank's hot sauce or Sweet Baby Ray's Wing Sauce
2 Tbs dry ranch seasoning mix
1 1/2 cups cheese (mozzarella, cheddar, italian blend)
1/4 cup crumbled blue cheese (optional)
1/4 cup sliced green onion (optional)

  1. Preheat oven to 350 degrees. 
  2. Microwave cauliflower, per the bag's instructions, minus one minute. 
  3. Add the cauliflower to your food processor, then add cream cheese, sour cream, hot sauce, and ranch mix. Pulse to blend. 
  4. Add cheese and pulse a few times to mix. 
  5. Stir in blue cheese and green onions, if using. 
  6. Transfer to a baking dish, bake for 25-30 minutes until heated thru. 
  7. Serve with celery, cukes, peppers, or pita/tortilla chips. Or, use as a spread for sandwiches/wraps.
