Fast & Easy Chocolate Buttercream
This frosting is so fast and easy! The flavor comes from the type of chocolate you use. It can be milk, semisweet, dark or white. I've not tried it, but I think if you sub peanut butter for the chocolate, that would work too. Just don't microwave it as long.
Makes enough for 12 cupcakes or 9x9 cake.
Ingredients
1/2 stick (4 Tbs) unsalted butter softened
1 1/2 cups confectioners' sugar, sifted
1 /2 teaspoon vanilla extract
2 Tbs milk
Small pinch salt
2 oz chocolate, chopped
3/4 tablespoon unsalted butter
Directions
Using a hand mixer or an electric mixer fitted with the paddle attachment, cream the butter on low, in a large bowl until soft, about 30 seconds. Gradually add the sugar.
When all the sugar has been added, add the vanilla, milk and salt. Increase mixer speed to medium and cream the ingredients, about 1 minute.
In a small bowl, melt the chocolate and butter in the microwave, 30-40 seconds. Let cool slightly. Beat into the buttercream mixture until well combined.
