Chorizo & Sweet Potato Chili


In a heavy bottomed pan, or instant pot, add:
  • 1 pound bulk chorizo (or casings removed), or use spicy pork sausage
  • 1 chopped onion
  • 2 poblano peppers, finely chopped
Sauté sausage until browned, add onion and peppers, sauté until soft. 

Next, add this stuff: 
  • 1 Tbs chili powder
  • 1 Tbs smoked paprika
  • 2 tsp dried oregano
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp kosher salt
  • 3 Tbs tomato paste
Add spices, give it a stir, then add tomato paste. 
Let it cook until the spices and tomato paste are warmed thru and creating browned bits on the bottom of the pan. 

The Big Finish: 
  • Add 2 cups beef broth, and scrape up the bits from the bottom. 
  • 1 large sweet potato, peeled and chopped small
  • 1 can mixed chili beans (can use kidney or black beans)
  • 2 Tbs Worcestershire sauce
  • Few dashes of hot sauce
Simmer until the sweet potatoes are tender. If using the Instant Pot, I sautéed everything in the pot, then cooked on the Manual setting for 4 minutes.
