Berry Jam Biscuits

The name really says it all. Berry. Jam. Biscuits. I would have called them "Holy Cow Those Are So Quick and Delicious Berry Biscuits" but that was just way too long. I used low sugar strawberry jam and fresh blueberries but the filling possibilities are endless! Raspberry preserves, apricot jam or sweetened cream cheese with lemon curd are next up for me!




Ingredients

1 can buttery flaky layers refrigerated biscuits
1/2 cup jam or preserves
1/3 cup small diced fruit or berries, optional
1/2 stick (1/4 cup) butter, melted
3/4 cup sugar

Heat oven to 400°F. Spray large cookie sheet with cooking spray.

Separate dough into 8 biscuits. Keep the biscuits on a plate, in the fridge, to keep cold and easier to cut. Gently separate or cut each biscuit in half. Spoon 1 tablespoon jam (little less if adding fruit) into center of each biscuit. Top with a small amount of fruit (I used 4-5 blueberries). Pinch or fork edges together to seal.

Line up biscuit ingredients, melted butter, and sugar. Dip and cover each filled biscuit with melted butter; then dip each in sugar. Place on the cookie sheet.

Bake 14 to 16 minutes until golden brown around edges. Let cool for 10 minutes.
